Fish Tacos

While thinking about our trip to San Antonio a couple of years back, my mind wandered to the great food we had. One of the best meals I had was at a place on the River Walk that had great Tex-Mex.

I had the fish tacos, so this is my attempt to recreate that wonderful meal.




Fish Tacos


Fish Tacos

Prep Time: About 10 minutes         Cook Time: 17-20 minutes

Ingredients for Fish Tacos:
1 pound fresh Cod fillet
½ tsp chili powder
½ tsp paprika
¼ ground cumin
¼  ground cayenne
1 cup red cabbage, diced
8-10 corn tortillas (about 5"or 6")
Spicy Mayo

Optional Additions:
sour cream
2 limes, cut in wedges
fresh cilantro, chopped
tomatoes, diced

Ingredients for Spicy Mayo:
1 cup mayo
¼ cup hot chili paste

Prepare the Spicy Mayo and Super Easy Guacamole before you start making the tacos. 

Preheat oven to 400º. Place cod on baking sheet. Mix the spices in a small bowl and sprinkle over the fish fillet. Place baking sheet with prepared fish in the oven and bake for 17-20 minutes. Check the thickest part of the fillet to see if it's done. Fish is done when it is opaque in color and pulls apart easily. Do not over bake the fish.




While the fish is baking, prepare the corn tortillas. Use a griddle or shallow pan to warm them. On med to med high heat warm the tortillas for 1-2 minutes per side. This all depends on how you like them. You can also use flour tortillas if you prefer. 






When the fish and tortillas are done, it's time to assemble the taco. 
Spread the Spicy Mayo on the tortilla, top with a piece of the fish, Super Easy Guacamole, small amount of diced red cabbage, sour cream, cilantro, or any other toppings that you like.
 Remember the more you put on the taco the harder it will be to eat. Everything with ooze out if it's over-filled. Serve with Homemade Refried Beans and Spanish Rice.


Spicy Mayo
1 cup mayo
¼ cup hot chili paste

Mix in small bowl and chill in fridge for about 2 hours.
 Great with fish, chicken, sushi, etc.
(I can usually find the chili paste in the produce section of my local stores.)

Spicy Mayo


 Squeeze the lime over the fish tacos and you're ready to dig in.


The complete meal. Fish Tacos with Spicy Mayo, Super Easy Guacamole, Homemade Refried Beans, and Spanish Rice.
Makes 8-10 Tacos

Spanish Rice


This is an easy recipe that goes well with any meal.

Spanish Rice with refied beans and fish tacos


Spanish Rice
Prep time: Minimal      Cook time: 20-25 minutes

1½ cups chicken broth
1- 10 ounce can of diced tomatoes & green chilies
1 cup rice


Mix all ingredients in a small to medium pot.







Bring to a boil. Cover and simmer for 15 to 20 minutes until rice is tender. 

Serves 4

Homemade Refried Beans



Are you thinking, "Why should I make refried beans when I can buy them in a can?"

I have three great reasons: 
 1) They taste sooooo much better.        
 2)  They're easy. 
 3) You control how thick OR thin they are.


Refried Beans



Homemade Refried Beans

Prep time: about 5 minutes     Cook time: about 30 minutes


2- 15.5 ounce cans of pinto beans, drained
½ cup water,(more if the beans are too thick for you)
1 small onion, chopped
1 tbsp bacon grease
1 glove of garlic, minced
1 tbsp chili powder
1 tbsp paprika
1 tbsp cumin
½ tsp cayenne
salt and pepper to taste
queso blanco, optional


Gather the ingredients.



In a small pot, sauté onions in bacon grease (or butter or oil), add the garlic. Add remaining ingredients. Stir. Cover pot and simmer for 20 minutes.







Uncover and use a potato masher until the beans are broken up and mashed to your liking. Simmer uncovered for about 5 minutes. 


Queso blanco is great on top of the beans. Velveeta makes queso blanco in pouches to make it even easier.

Serves 4.

Super Easy Guacamole

Sometimes you just want some guacamole but don't have all the ingredients. 

Sometimes you might want to do things the easiest way possible.

This is the recipe for you!


Super Easy Guacamole

My version takes THREE ingredients. Four if you want to add some fresh cilantro. That's it!! 


Super Easy Guacamole
2 avocados, mashed
½ cup of any prepared salsa
½ lime

In a small bowl, mash avocados with a fork. Add the salsa. The salsa can be from a jar or fresh salsa. Squeeze the lime over the ingredients and mix well. Add cilantro if you have some.


Preparing the avocado


If you have never prepared an avocado it might seem difficult but it's pretty easy. Set the avocado against a cutting board (you don't want an unplanned trip to the ER to mess up your day) and cut it length wise until you hit the pit. Now turn the avocado to cut on all sides. Pull the two sides apart. Use the blade of the knife to whack the pit and it should come right out. Then use a spoon to scrape the avocado out of the skin. If you are not going to mash your avocado, then you can carefully remove with a spoon and then cut into slices for sandwiches, salads, etc. 






I love this Super Easy Guacamole on tortilla chips.





It's also great on Fish Tacos with all the fixins. Hmmmmm. These recipes might be coming soon.
