Hashbrown Casserole

This is my version of Cracker Barrel's Hashbrown Casserole. Years and years ago I found a recipe that claimed to be a version of the Cracker Barrel recipe but something was missing. I talked to a friend that worked there at the time and she let me in on a little secret. I'm about to spill the secret.

It really makes a difference. Trust me!

I always make this for Easter, Thanksgiving, Christmas, and sometimes for "just cuz". 


It's great as a side dish and I often have it for breakfast the day after a holiday. It's so easy and makes enough to feed a large crowd.

Hashbrown Casserole




Hashbrown Casserole
Prep Time: 10 min.   Cook Time: 35-40 min.

2  packages ( 22.5 ounces each) frozen hashbrown patties - About 20 patties
1 ½ cup (12 ounces) Sour Cream
1 can (10.5 ounces) Cream of Chicken soup
2 cups shredded Colby cheese
1 small onion, chopped
¼ - ½ cup butter, melted
1-2 tbsp butter, to sauté onions
 1 tsp salt
½ tsp pepper

The ingredients.

Thaw the hashbrown patties.
Preheat oven to 350º.
Chop the onion and sauté in 1 to 2 tablespoons of butter. I like mine dark and fully cooked.




While onion is cooking, break apart the hashbrowns in a large casserole dish or 9x13 pan. Add all the other ingredients and mix well. 


 
Ready to be mixed.

Cover with foil and bake for 35 to 40 minutes.

Serves 12-14 
This varies depending on if being served as main or side dish.

Loose Meat Sandwiches

Loose Meat Sandwiches




This is one of those things, like Tammy's Frito Pie, that I ate when I was younger and when I got hungry for it I had to come up with my own recipe because I couldn't get one where I lived. This was before the internet with the many copy cat recipes that come up when you search for things that you don't know. That's how old I am, kids! :)

We refer to these as Tasty Made sandwiches. Weird, right? Well that's because there's a place called Maid Rite that makes loose meat sandwiches, but my husband ALWAYS called it Tasty Made. I don't know why and he doesn't either. 

My version is very different from those you will find on the internet that are copy cat recipes but I like it just the way it is and I won't change it.

Loose Meat Sandwiches

2 pounds lean ground beef
½ cup water
small onion, diced or 3 tbsp minced onion
2 tbsp steak sauce (I like A1)
1 tsp soy sauce
1 tsp minced garlic
2 tsp seasoned salt
pepper to taste 
4-6 sliced of white American cheese slices, or cheese of your choice 

6-8 Brioche buns
sandwich size pickle slices
mustard
ketchup

The ingredients minus the ground meat.


Brown the ground meat over medium high heat. Drain if necessary. Add all the spices and seasonings and water. Simmer for about 20 minutes. Cut or break the cheese into 1-inch pieces and add to pan. stir until cheese is melted and well blended. That's it!

Top the brioche bun with the meat mixture, add the pickle, and ketchup and mustard. 

As you can see from the picture, I prefer mine with mustard only.
